From our kitchenHaydari – yoghurt dip with white cheese and dill
Haydari is the creamiest Turkish meze: strained yoghurt stirred with crumbled white cheese, garlic and herbs. A dip for bread, a side for grilled meat or part of a meze platter.

Method
Mash the cheese finely with a fork, crush the garlic, chop the dill finely.
Stir the yoghurt with cheese, garlic, dill, mint and 1 tbsp olive oil until smooth and salt.
Chill for 30 minutes.
Serve garnished with the remaining olive oil and pul biber.
Tip from the storeSüzme yoghurt from the chiller saves straining – or drain normal yoghurt in a sieve for 2 hours.
