From our kitchenÇay – Turkish tea in the çaydanlık
In Turkey çay is not a drink but a way of life – at any hour, with every conversation. It is brewed in a çaydanlık: water boils below, concentrated tea steeps above and everyone dilutes to taste.

Method
Fill the lower kettle with water and bring to the boil.
Put the tea in the upper pot, pour over a little boiling water and set the pot on the kettle.
Steep over low heat for 15 minutes until the leaves sink to the bottom.
Fill glasses one third with tea and top up with hot water from the kettle – “açık” (light) or “koyu” (dark) to taste.
Serve with sugar cubes, never with milk.
Tip from the storeLoose Rize tea, çaydanlık kettles and tulip glasses: all on the tea shelf and in the household section of our store.
