Şekerpare (“piece of sugar”) are soft, syrup-soaked cookies of semolina and butter, each with a hazelnut in the middle. The classic pastry with Turkish tea.

Method
Boil syrup from sugar, water and lemon juice for 10 minutes and let cool.
Cream butter with icing sugar, egg and vanilla sugar, knead in semolina, flour and baking powder to a soft dough.
Shape walnut-sized balls, flatten slightly, brush with egg yolk and press a hazelnut into each.
Bake at 170 °C for 25 minutes until golden.
Place the hot cookies in a dish, pour over the cold syrup and leave for 1 hour.
Tip from the storeSemolina, hazelnuts and butter are all in store – for less sweetness use only half the syrup.
