From our kitchenYayla çorbası – yoghurt soup with rice and mint
Yayla soup (“highland soup”) is the gentlest Turkish soup: yoghurt thickened with egg and flour, cooked with rice and served with mint butter. Ideal for children and upset stomachs.

Method
Wash the rice and cook in 1 l water for 15 minutes until soft.
Whisk the yoghurt with egg, flour and 200 ml cold water until smooth.
Stir a ladle of hot rice water into the yoghurt mixture, then add everything to the pot while stirring constantly.
Simmer over low heat for 10 minutes, stirring, until the soup thickens, then salt.
Foam the butter with the mint, drizzle over the soup and sprinkle with pul biber.
Tip from the storeTangy bucket yoghurt (süzme or kaymaklı) makes the soup especially rounded.
