From our kitchenTarhana çorbası – fermented yoghurt and grain soup
Tarhana is a dried, fermented powder made from yoghurt, flour and vegetables. Mixed with water and finished with paprika butter it becomes a tangy, spicy soup in minutes – the Turkish answer to a cold.

Method
Stir the tarhana into 250 ml lukewarm water and let it soak for 10 minutes.
Melt the butter, fry the tomato paste briefly, add the remaining water and bring to the boil.
Pour in the tarhana mixture while stirring and simmer over low heat for 10 minutes, stirring constantly so it does not catch.
Season with mint, pul biber and salt, add chickpeas if you like.
Serve hot with flatbread.
