From our kitchenSütlaç – baked Turkish rice pudding
Fırın sütlaç is the most popular Turkish dessert: rice is cooked in milk until creamy, poured into bowls and baked until the top is spotted brown. Served cold with cinnamon or chopped hazelnuts.

Method
Cook the rice in 300 ml water for 12 minutes until the water is absorbed.
Add the milk, bring to the boil and simmer for 15 minutes, stirring.
Mix the rice flour with a little cold milk, stir in with the sugar and vanilla sugar and simmer for 5 more minutes until creamy.
Pour into ovenproof bowls, set in a tray of hot water and brush the tops with egg yolk.
Brown under the grill at 240 °C for 8–10 minutes, cool and serve cold with cinnamon or hazelnuts.
