From our kitchenMantı – Turkish dumplings with yoghurt
Mantı are the tiny dumplings of Anatolia: filled with minced meat, boiled and served with garlic yoghurt, melted paprika butter and dried mint. With ready-made mantı from the freezer they take 15 minutes.

Method
Knead flour, egg, water and salt into a firm dough and rest for 30 minutes.
Mix the mince with onion, salt and pepper. Roll the dough very thin, cut into 3 cm squares, put ½ tsp filling on each and pinch the corners together at the top.
Boil the mantı in plenty of salted water for 8–10 minutes (frozen: see packet) and drain.
Stir the yoghurt with crushed garlic and salt; melt the butter with tomato paste and pul biber.
Plate the mantı, pour over yoghurt and paprika butter and sprinkle with mint and sumac.
